Top o’ the morning to you! Corned beef and cabbage—it just doesn’t feel like St. Patrick’s Day without it. But sometimes, especially when St. Patrick’s Day falls on a weekday, there’s just not time to sit around for three hours waiting for the corned beef to cook. Enter the slow cooker—toss everything in when you wake up, and a feast is ready for you at dinner time. This year I got a grey corned beef from Meat Again in Westford. Manager Scott Lyons explained the difference between grey corned beef and the red corned beef you find at the supermarket. “Grey corned beef is the 'Irish' style corned beef," Lyons said.
