What's for Dinner?:Chicken and Sausage Casserole

Here is a recipe that a friend of mine, Kitsie, made for me after my son was born. It’s almost 17 yrs old, an oldie but a goodie. Can also be made the night before and baked the day you want it. It’s Chicken and Sausage Casserole and that’s What’s for Dinner? Pair it with a nice salad, French bread and asparagus and your good to go. Don't be discouraged on how it looks in the photo. It really does taste good!

Chicken and Sausage Casserole

  • 1 lb Jimmy Dean Sausage (regular) you can use regular casing sausage, but remove the casing or buy the meat not in the casings.
  • 1lb Fresh Mushrooms sliced
  • 2 Large Onions chopped
  • 3lbs of Boneless Chicken (I used 2lbs for this recipe) Cut into bite size pieces
  • 1 Box Uncle Bens Wild Rice with Herbs (make the box according to package and set aside)
  • ¼ cup Flour
  • ½ Cup Heavy Cream
  • 2 ½ Cups Chicken Broth

Directions:  Make rice and set aside.

 In a large sauté pan sauté your sausage, drain fat and return to pan. Add your onions, mushrooms, and chicken till no longer pink.

In a saucepan add your ¼ cup flour to ½ cup heavy cream and whisk in 2 ½ Cups
Chicken Stock till bubbly and thick. Combine the meat/rice/sauce into a large bowl, turn into a casserole dish and bake at 350 for 25-35 mins.
